A couple of recipes & special marinades 
BBQ Chicken Thighs   What you will need for marinade:  


 




2 tablespoons  lemon juice       
1 teaspoon  paprika
1 tablespoon oil    
1 teaspn garlic salt                     
2 tablespoons  tomato sauce                  
1 teaspoon Worcestershire sauce

Make the marinade by mixing all the above ingredients.
Marinate the chicken in marinade for at least 30 mins.
BBQ 15-20cm from heat until evenly browned on both sides.

Brush with remaining marinade during last 10 mins of cooking.
Chicken is cooked when juices close to bone run clear.

Greek BBQ Chicken
  What you will need for marinade:


   


1 teaspoon Paprika
Juice of 1 lemon                                        
2 cloves of crushed garlic
1/4 cup of olive oil                                         
1 teaspoonn dried Oregano

4 large or 8 small chicken pieces
Can use chicken legs, quartered chickens, or
thread wings and small pieces on skewers.

   
Make the marinade for the Greek BBQ Chicken.
BBQ 15-20cm from heat. Brush frequently with marinade.
Cooked in about 20 - 30 mins.

Peanut marinade
(Use the taste on lip test
if peanuts are toxic for you)


1/2 cup peanut butter
1/2 med onion, chopped
4 cloves garlic
1 handful fresh thyme OR
2 tblspoons dried thyme
1 cup fresh basil, leaves
& stems
2-3 limes, juiced
2-3 beef stock cubes
1/4 cup olive oil
1/2 can tomato paste   
Cayenne pepper or
peri-peri to taste


Mediterranean:

1/4 cup of red or white wine
2 tablespoons olive oil
1 teaspoon dried basil
1 teaspoon dried oregano
1/4 teaspoon dried thyme
1 tablespoon
Worcestershire sauce.

Alternative additions:
2 tblspoons of wine vinegar
1 teapoon ground blk pepper
1 cup of fresh lemon juice
1 tblspoon of minced garlic
Yoghurt:

1/4 cup od plain yoghurt
2 teaspoons of honey
2 tblspoons of fresh mint
1/2 -1 teaspoon cummin
1/2 -1 teaspoon coriander
1/2 -1 teaspoon paprika

Alternatives:
6 tblspoons sunflower oil
1 teaspoon of ginger
1 finely chopped red chilli
1 teaspoon of cinnamon
1 finely chopped onion
1 teaspoon garam masala

Back
 

Hot BBQ Sauce:   

Fantastic for Meatballs
and Sausages

1 teaspoon chop garlic
1 onion finely chopped
1 tablespoon oil                  
2 tblspoons tomato sauce
2 teaspoons tomato paste    
1 tblspoon brown sugar
2 teaspoon Worcestershire
1 teaspoon of mustard
  
Microwave garlic and onion,
full power 3 mins. Add rest ingreds, heat till bubbling
about 2 mins. Enjoy!



Oriental:                                           
2 tblspoon lemon juice
2 tblspoon soya sauce    
1 tblspoon brown sugar  
1 tablespoons oil              
1 clove crushed garlic
1 teaspoon ginger

Alternative additions:
Sliced green onions
Pineapple juice
                           

Don't forget
this one ...
BBQ Corn Cobs:


Use small cobs
of young tender corn.
Soak in water for 10 mins.
BBQ over low heat,
turn often, until the husks char. Cut bases from cobs, peel off husks/silk.
